CLAY POT BREAD

You need a clay pot or a refractory form to make this bread.

50 gr levadura. (yeast)
3 dl agua. (water)
1 1/2 huevo. (egg)
200 gr queso gouda ( gouda cheese)
1ts sal. (Salt)
150 gr. harina de trigo integral. ( whole wheat flour)
400 gr. harina de trigo. ( wheat flour)

Filling:
2 puerros. (leek)
2 pimientos rojos ( red paprika)
50 gr harina de trigo. (wheat flour)

Topping:
1/2 huevo. (egg)
100 gr. queso rallado ( grated cheese)

Put the yest into varm water, after 10 min. Add egg, the grated gouda cheese, sometimes I use the cumin version ( I buy it in the Hipercoor cheese counter),the salt and the whole wheat flour and mix.
Then add the wheat flour, mix and let i raise on a warm place until double size.
Chop the leek and the green and red paprika, and mix this with the 50 gr of wheat flour, and knead into the dough, I use some olive oil to grease the clay pot, and put the dough in, let it raise agIn for another 30 min.
Brush the dough with egg and toss the gradted cheese over.
Preheat the oven to 170 degrees and cook for 1 hour.

This bread is lovely to go along with Serrano Ham and Manchego Cheese, or some Blue Cheese.
We love to have a small plate with some Extra Virgen Olive Oil mixed with salt to dip the bread , yummy and healthy.
