TAHINI

To make the tahini paste, very much used in the noth of Africa, Greece Turkey and Middle East, we only need two ingredients ;

200 gr of semillas de sesamo  ( sesam seeds)
50 gr. of oil                            ( it can be  sunflower, sesam,olive oil)

You heat up a huge frying-pan to medium/hot temperature, and then put the sesam seeds in and remove so they get toasted all over,and you will notice a very nice scent spreading out of the pan, then they are ready to go, hot in the food-processor, the heat favors the sesame oil to come out, you now get a dense paste, and you make it softer adding the oil.

Can be kept in the fridge for a couple of weeks.
Tahini has quite high levels of calcium,proteins,omega 3 and 6,  that makes it good for vegetarians, and one of the ingredients  to make humus.

HOMEMADE MAYONNAIS

In Spain you can find quite a lot of dishes containing mayonais, in Norway you normally buy it ready in the supermarket, but in Spain we like the homemade mayonais, every home has it's small secret about the recipe, and the taste can be quite different, also dependig on what it's going to match with.

We always use milk instead of egg ,in the summer, not to have problems with the salmonella, when it' hot like theese days.

Shoppinglist:
1 huevo. (Egg)
3 dl AOVE. ( extra virgin olive oil)
Vinagre de vino blanco ( white wine vinager)
Sal. (Salt)

Put the egg or the milk in a high bowl, add salt and vinager, and at the time you use the hand mixer and let the oil go in a thin beam. Depends on how liquid you need it, you continue with the mixer and it will turn more solid.
Taste for salt and vinegar, and ready to use, some times if I'm going to use it for sea-food, i use lemon instead of vinager, here is a question of personal taste.

Some dishes don't need the taste of oliv oil, specially potato and egg dishes, so there I use sunflower seed oil, try and taste, and you will find the right way por your dishes.

TOMATE FRITO

Fried tomatoes is the translation of this basic tomato sauce, wich is one of the ingredients of  hundredes of Spanish dishes., or it's used by itself to accompany egg ,fish and different kinds of meat, now we are in the wonderful tomato season, you have the best product for the best price. It can be made ahead, 4-5 days in fridge or you can freeze it .Let it defrost in the fridge over the night.

Ingredients:
1,2 kg tomates muy maduros    ( very ripe tomatoes)
1 cebolla.            ( onion)
1 dinete de ajo.    ( clove of garlic)
1 zanahoria.         (carrot)
1 dl. Aove.           ( virgen extra olive oil)
Oregano al gusto.  ( oregano as much as you like)
1/2 cusharita of tagatesse. ( sweetner or 1 teaspoon sugar)
1 cucharita de sal.  ( teaspon of salt)

To start I use to give the tomatoes a run in the Thermomix, food processor , first at half speed for 30-40 sec. And then 2 minutes on full speed. I chop the onion finely together with the garlic clove. Have the olive oil in a saucepan, and let it fry at medium temperature until golden, add the grated carrot and let it fry together for a minut or two, then add the " tomato -juice", the sweetner, the oregano,and the salt. This must fry on a low fire for at least 25-30 min. I like to use it for most dishes like it comes out, but often the children don't like the small onion pieces, so then I let it go for a moment in the food processor again.
If you dont have a foodprocessor, boil a pot of water, and put the tomatoes in until the peel goes easy off, and then you grate them before frying, it turns out great, but it's a little more work.
