APPLE PIZZA

 Hi folks, so much vegetables since christmas, my family is screaming for other foodies, and I felt that something else could be nice too, family dinner, what can I prepare?  When I suddenly remebered  that it was so long time since I made a real home made pizza, sometimes Andrea buy ready made bases and top with the tings she and her friends like. But we didn`t have this family pizza since a long time ago.
So thought, so done, and I remembered a recipe I recently saw in a very nice Spanish blog, link here ;  Noelia Recetas , I have changed it a bit for our personal taste, but the idea was from her blog.

Shopping list:

For the pizza dough;
350 gr harina de trigo.               ( all purpose flour)
75 gr. de polenta.                      ( polenta)
75 gr. de harina de spelta.         ( spelt flour)
10 gr. de levadura fresca.          (yeast)
1 vaso de agua tibia                  ( glass of warm water)
2 cucharadas de AOVE.           ( virgen extra olive oil)

For the topping:
2 cebollas grandes.                                              ( big onions)
2 dientes de ajos.                                                ( garlic cloves)
3 cucharadas de vinagre balsamico de Modena.   ( vinager Balsamico de Modena)
3 manzanas acidas.                                              ( acid apples)
300 gr queso rallado.                                          ( grated cheese)
150 gr queso gorgonzola.                                   (Gorgonzola cheese)
15 nueces.                                                         ( walnuts)
3 cucharadas de AOVE.                                    (tablespoons of virgen extra olive oil)
Sal y pimienta.                                                   ( Salt and pepper)
Un poco de sirope de agave.                             ( some  agave syrup)


Start mixing the flours and with your fingers add the yeas and mix all.
Dissolve the salt in the warm water, and go adding the water to the flours little by little, add the extra virgen olive oil, and knead the dough until it doesn't feel sticky,  have it in a bowl, cover with plastic film, put in a  warm place for at least one hour.


Then peel the on onions and garlic cloves, and cut finely in juliana,  put the extra virgen olive oil in a skillet and fry the onion and garlic until golden, toss a pinch of salt an pepper, and then add the Balsamico de Modena, and let reduce for some min.
Then knad the dough for a while, and let it rest for 15 min.
Now we peel the apples and cut in fine slides like you see on the photo, the chese could be mozarella or any cheese you prefer when youmake pizza, I didn't have Mozarella, so I used Emmenthal.
 Divide the dough in so many pices as pizzas you want to make, I made one to cover the whole baking plate,covered with baking paper, I find that easier, and quicker to cook, cover with the onion mix, then add the apple slices and top with the grated cheese, and toss the Gorgonzola crumbles on top of that.

Now goes in the preheated oven at 200 degrees, at the second rail for 15 min, the bottom must be crunchy and the topping cheeses melted. It can depend a little on your oven.
When you take the pizza out of the oven, add the walnuts diveded in halfs, toss a little Agave Syrup over the pizza, and serve emmediately.










I`m sorry for the quality of the photos, really don`t know what happened, normally I have a look while I`m shooting, but this time with the family around, i forgot. But it doesn`t mean there`s something wrong with the pizza. Not a single crumble was lef., So I guess it was nice, what do you think?
