The doctor, who practice the chinese medicine, in my first visit, asked me to go up and down the stairs with 15 kg rice ( or whatever 15 kg) , after going up and down 3 times, I was quite breathless. My first idea that I was always dragging the 15 kg. everywhere, so that's when I started serious dieting, but different from all the diets I ever did.
Wery important is the 5 meals a day, and a diet that learn you to eat helathy for ever, not only during the time you are loosing wight, the most difficult , to conserve the weight you have afterwards.
I changed some proteins from animal to vegetal, you can do it little by little, specially if you have young children, start taking the half of meat, the other half of some legume, in the hamburgers, the lasangna, the bolognese sauce etc.
I will start with some hamburgers that we absolutly love.
|HERE IS ALL YOU NEED.|
2 Tazas de quinoa cocida ( boiled quinoa)
2 Zanahorias ( carrots)
1 Calabacin. ( zucchini)
1 Cebolla. ( onion)
1 ch Comino (cumin)
1/2 ch Sal (salt)
4 cc Pan rallado (breadcrumbs)
2 cc Harina de grabanzos. (chickpea flour)
1/2 dl Agua. (water)
Aceite de oliva Virgen Extra. ( virgen extra olive oil)
Start chopping the onion, have some olive oil in the bottom of a frying pan, I use 1 spoonful, but you might need a little bit more,the onion must not be brown, only transparent.
While the onion is frying, chop the zuccini very finely, peel the carrots, and grate them, when the onion is almost ready, add the grated carrots and the zucchini cubes, let fry for about 5 min. Put in a strainer and press to get most of the olive oil out.
Put in a bowl, and let it chill.
The breadcrumbs I make myself, as well as the chickpea flour, in the Thermomix, but you can also buy it. ( I use to put it first on 5 and then go slowly up to 10, the chickpeas make a lot of noise, dont let your children or dogs be in the kitchen while you do it. The bredcrumbs need 1 min. And the chickpeas 2 or 3 min.
Have the chickpea flour and the water in a small glass with cover, and shake well.
The vegetables are now chilled, so you can add the cooked quinoa, the breadcrumbs, salt, cummin, and put in the mix of water and chickpea flour, mix well, and put in the fridge for 15-20 min.

HILDES ORANGE SAUCE
4-5 Naranjas. (oranges))
2-3 Ramas de romero fresco ( fresh rosemary branches)
2 Dientes de ajo. (garlic cloves)
1/2 ch Sal. (salt)
1 cc Aceite de Oliva Virgen. ( virgin extra olive oil)
Press the oranges , you are only going to use the juce, and grate some of the peel.
Chop the garlic very fine and when the olive oil is hot, fry the garlic together with the fresh rosemary branches, until the garlic is golden, then add the orange peel and the juice, let it simmer for 8-10 min.
Take away the rosemary branches, if you like, depends what I'm going to use it for , some times I like to have it straind, sometimes I serve it the rustic way.

|SOME TIMES I MAKE VEGAN SPAGUETTI, USING THE POTATO PEELER, TO DO THE ZUCCHINI AND CARROT .I ADD SOME LEEK , AND LET IT BOIL UNTIL "AL DENTE"|
|QUINOA HAMBURGER , VEGAN SPAGUETTI AND HILDES ORANGE SAUCE.|
