Fried tomatoes is the translation of this basic tomato sauce, wich is one of the ingredients of  hundredes of Spanish dishes., or it's used by itself to accompany egg ,fish and different kinds of meat, now we are in the wonderful tomato season, you have the best product for the best price. It can be made ahead, 4-5 days in fridge or you can freeze it .Let it defrost in the fridge over the night.

1,2 kg tomates muy maduros    ( very ripe tomatoes)
1 cebolla.            ( onion)
1 dinete de ajo.    ( clove of garlic)
1 zanahoria.         (carrot)
1 dl. Aove.           ( virgen extra olive oil)
Oregano al gusto.  ( oregano as much as you like)
1/2 cusharita of tagatesse. ( sweetner or 1 teaspoon sugar)
1 cucharita de sal.  ( teaspon of salt)

To start I use to give the tomatoes a run in the Thermomix, food processor , first at half speed for 30-40 sec. And then 2 minutes on full speed. I chop the onion finely together with the garlic clove. Have the olive oil in a saucepan, and let it fry at medium temperature until golden, add the grated carrot and let it fry together for a minut or two, then add the " tomato -juice", the sweetner, the oregano,and the salt. This must fry on a low fire for at least 25-30 min. I like to use it for most dishes like it comes out, but often the children don't like the small onion pieces, so then I let it go for a moment in the food processor again.
If you dont have a foodprocessor, boil a pot of water, and put the tomatoes in until the peel goes easy off, and then you grate them before frying, it turns out great, but it's a little more work.
